4 No Fail Ways to Cook Chicken

Cooking chicken isn’t rocket science

Cooking chicken isn’t rocket science, but it can lead to frustration, unsatisfying results and HANGRY guests. Here are 4 no fail ways to cook chicken. My go to for any recipe is skinless, boneless breasts. I find the difference in convenience is worth every penny. But if the budget is running a bit tighter any cuts will usually do.    

Method 1: Crock pot – Yep you guessed it.

Crock pots can make pretty much any meal low hassle. It keeps meat moist and tender and prep times to a minimum. Crock pot meals are great for 2 but can feed the masses.

Ingredients
  • 2 whole Skinless, boneless chicken breasts
  • 1/2 Cup Water Optional - Chicken Stock
  • 1 clove garlic
  • 1/2 tsp Fresh ground pepper
  • 1/4 tsp Salt

Instructions
  1. Add all ingredients to crock pot.
  2. Put on low for 5-8 hours
  3. Remove from heat & shred.
Recipe Notes

The longer and slower it cooks the more tender it will be. However most breasts will be done at about 3-5 hours.

Serving options are endless.

Method 2: Baked under foil

This suits the everyday get home and cook kinda situation. It doesn’t take a ton of time and prep is a breeze. Just like a crock pot you can add just about any kind of sauce or seasoning to make it meal suitable.

Ingredients
  • 2 Skinless, boneless chicken breasts
  • 1 TBSP olive oil
  • 1 TBSP White Wine Vinegar
  • 1 Packet Dry Italian Dressing

Instructions
  1. Preheat oven to 350.
  2. In a gallon zip lock bag, ADD chicken, olive oil, vinegar and seasoning packet. Shake up to evenly coat * You can toss in the fridge to marinate or right into dish to get cookin'
  3. Place evenly coated chicken in glass baking dish. Cover with foil and place in oven for 25 minutes.
  4. At 25 minutes remove foil and place back in oven for additional 5 minutes or until juices run clear.
  5. Remove from oven, recover with foil and let rest for 5 minutes.

Goes great with just about any sides and veggies.

 

  • Italian dressing packet can be traded for a dry ranch packet with equally great results.

Method 3: Brined & Grilled

This takes a little more pre planning. AND takes the dryness out of grilling.

Ingredients
  • 2 Skinless, boneless chicken breasts
  • 2 Cups Water Divided in half
  • 1 Peel from a Lemon
  • 2 TBSP Salt
  • 2 Cloves garlic
  • 1 Packet Dry Italian Dressing
  • 1 TBSP Sugar

  1. Place chicken in 1 gallon zip lock bag. Set aside
  2. Bring 1 cup water, lemon, salt, garlic and sugar to a boil. Set aside.
  3. Stir remaining water and Italian dressing until dressing dissolved.
  4. Add both solutions to chicken and refrigerate overnight.
  5. Clean and prep grill. Rub grates with oil to prevent sticking. Turn on High and let preheat. - Let chicken come to near room temperature
  6. Place chicken in hot grill and sear each side for 1-2 minutes.
  7. Turn grill to Medium and continue to cook thoroughly (fluids run clear) flipping about half way through cooking Rest for 5-10 minutes and ENJOY!!!

Method 4: Dutch Oven

Dutch oven cooking. This method takes a little more prep time but cooks up amazingly on the stove top.

Ingredients
  • 2 Skinless, boneless chicken breasts
  • 2 TBSP Canola Oil
  • 2 TBSP Dried Oregano
  • 1 TBSP Cumin
  • Salt to taste
  • Black Pepper to taste
  • 4 Cloves garlic
  • 1/4 to 1/2 tsp Cayenne Pepper
  • 2 Cups Chicken stock
  • Sour Cream
  • Salsa
  • Lime Wedges
  • Cilantro
  • 8 Flour Tortillas

  1. Heat the oil in a 5- to 6-quart Dutch oven over medium-high heat. Season the chicken with the oregano, cumin, salt, and black pepper.
  2. Add the garlic, and cayenne to the Dutch oven and cook, stirring, until the garlic is softened, 3 to 5 minutes. Return the chicken to the Dutch oven and add the broth. Simmer 10-15 minutes
  3. Heat oven to 350° F. Wrap the tortillas in foil and bake until warm, 5 to 10 minutes. Serve the chicken with the tortillas, sour cream, salsa, cilantro, and lime wedges.
